Toffee apple upside-down cake

Ooohhhh myyyy goodness, this is gooey cinnamony appley madness. Thank you Jamie Oliver for the recipe, we shall be making this regularly from now on!

Ingredients: 3 dessert apples; 25g plant butter; 195 muscovado sugar; 180g plain flour; 1 tsp bicarbonate of soda; 2 tsp mixed spice; 80ml sunflower oil; 1 tsp vinegar; 1 lemon.

Grease and line the base of a 20cm tin. Core and grate two of the apples, and finely slice the third. Melt the plant butter with 85g of the sugar in a pan and pour into the prepared tin, then top with the slices of apple.

Combine the flour, 110g sugar, bicarb and mixed spice in a large bowl. In a separate jug, combine the oil, 180ml water, vinegar, grated apple and lemon zest, then pour this into the dry ingredients and mix together thoroughly. Pour the mixture over the layer of apples and bake at 180 °C for 30 mins, until a knife comes out clean. Leave to cool for 5 mins, then turn out.
