
Beautifully nutty and rich, and packed with a mixture of dried fruits, this is also the easiest cake recipe! Absolutely perfect with a good cup of tea.
Ingredients: 500g dried fruit; 1 tsp mixed spice; 100g soft brown sugar; 180g vegetable oil; 120ml soy milk; 100g ground almonds; 225g self-raising flour. Optional: scattering of whole almonds.
Mix the dried fruit, mixed spice, and sugar in a large bowl. Add the vegetable oil and soy milk, and stir well to combine. Finally, fold in the ground almonds and the flour. Grease and line a 23 cm round cake tin (or equivalent), pour in your mixture (arrange whole almonds around the top if you like) and bake at 160°C for 1 hour until golden brown. Check it’s baked through by inserting a knife into the middle. If it’s clean, it’s ready!
