
This recipe by BBC Good Food is so good. We’ve made it many times, either as a loaf cake or as cupcakes. It’s the easiest cake recipe and uses only a handful of ingredients that are normally kicking around in your cupboard anyway. For some extra jazz, try replacing the water with a gin and tonic 😉
Ingredients: 275g self-raising flour; 1 tsp baking powder; 150g caster sugar; 100ml vegetable oil; 170ml cold water; 1 lemon; 150g icing sugar.
In a large bowl, mix together the flour, baking powder, sugar and the zest of the lemon. Add the oil, the juice of half the lemon, and the water. Mix to a smooth batter, then spoon into a loaf tin lined with baking parchment. Bake at 180°C for 30 mins until risen and golden brown, and a knife comes out clean. If you’re making cupcakes, they’ll only need 10-15 mins. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely.
Make the icing by mixing together the icing sugar and the remaining lemon juice. If it’s too runny, add more icing sugar. Ice your cake, and enjoy!
