Fiery ginger biscuits

Certain to warm you when it’s cold outside, these biscuits are crisp on the outside and soft in the middle. Great for dunking!

Ingredients: 110g plant butter (or coconut oil); 110g soft brown sugar; 110g golden syrup; 225g self-raising flour; 2 tsp ground ginger; icing sugar to dust.

Melt the sugar, plant butter and golden syrup together in a pan and stir in the flour and ginger. When cool enough to handle, roll a heaped teaspoon of the mixture at a time into a ball and place on a lined baking tray. Bake for 15 mins at 170°C. Transfer to a rack to cool, and dust with icing sugar. We made a paper cut out star to decorate ours here.
