
Golden toasted oats with a gooey spiced apple centre, these are the cake equivalent of a big warm hug!
Ingredients: 350g rolled oats; 175g plant butter; 150g dark brown sugar; 100g golden syrup; 2 apples (Bramleys are best); 1 tsp mixed spice; 2 tbsp caster sugar; 1/2 tsp salt. Optional: handful of dried fruit.
Peel, core, and chop the apples into a saucepan with a little bit of water. Add the caster sugar, mixed spice, and dried fruit if using. Cover and simmer until nicely stewed (about 5 mins).
In a separate large pan, melt the plant butter, dark brown sugar and golden syrup together, and then stir in the oats, salt and the dried fruit if using. Line a 20cm baking tin with greaseproof paper and spoon half the oat mixture into the tin, pressing down with the back of the spoon. Then spoon the spiced apple mixture on top in an even layer. Pop the remaining oat mixture on top and cook st 180°C for about 30 mins, until golden brown. Use a sharp knife to score into pieces before leaving to cool on a wire rack.
