Date and orange scones

These can be on the table in less than 30 mins, and are made from store-cupboard ingredients, so you can whip up a warm batch as a quick easy snack – ideal for home working! Makes 18 small scones (but go for some big beauties if you fancy!)

Ingredients: 250g dried (pitted) dates; 300ml water; 2 tbsp vegetable oil; 400g self-raising flour; 60g icing sugar; zest of an orange; 1/2 tsp cinnamon.

Place the dates in a small pan with the water and oil and bring to the boil. Once boiling, remove from the heat and leave to cool a little. This loosens the dates and surrounds them with a delicious caramel that helps bind everything together. In a large bowl, mix together the flour, icing sugar, orange zest and cinnamon. Once cool enough to handle, tip in the date mixture and bring everything together into a dough.

Roll out to about 2cm thickness, and divide into scones (use cutters to form rounds, or a knife to make squares). Place on a lined baking tray and bake at 180C for about 15 minutes, until golden. Serve warm with lashings of plant butter! Once cooled, they’re delicious toasted too.
